Wash and clean breast. Make a slit length wise along both sides of breast bone. Place cheese of choiceinto each slit. I like to get sliced habenero cheese and each slice will do 2 breast. Wrap in bacon and pin with tooth pick. I like the thick sliced peeper bacon. Make sure to let your bacon warm up a bit too make it easier to wrap around the breast.I like putting Allegro marinade in a 1 gallon bag and placing the breast in the bag as they are prepared. I generally let them soak while i get my grill going and let the coals burn down for about 30 to 40 minutes before placing breast on grill. Keep it covered and this will help with flare up from the bacon generally about 20 to 30 minutes turning as the bacon cooks to a medium crispyness. Serve hot with you choice of fixens and enjoy!!
